Buckling Under Pressure

You’ll have to believe me when I said I laid out the most beautiful design for this dessert. Graceful swooping spirals of jam marbled the batter with artfully arranged baby figs on top. They gleamed, catching the light of the oven, as I carefully closed the door. And were promptly swallowed by the cake rising up from below.

That’s just what buckles do. I knew this, and even had a passing thought that I should photography the dish before baking, and I still failed to capture evidence. At least, I know that I’ve made the recipe correctly, likely suffering the same initial disappointment of my ancestors, seeing all their hard work disappear into the buttery abyss.

What’s a Buckle?

I like to describe the buckle as a confused cobbler. The batter goes on the bottom, rather than being dropped in dollops on top, but then somehow still ends up on top of the fruit. As it bakes, the cake rises around the filling, puffing and cracking until the surface looks rumpled. Performing an explanation of the name without saying a word, the top appears to “buckle” under the weight of all that juicy fruit. Unlike a crisp or crumble, where the fruit is unquestionably the star, a buckle strikes a happy balance between cake and compote. Every bite delivers tender, buttery crumb soaked with vibrant fruit juices, punctuated by pockets of jammy sweetness.

Fig-ment of Your Imagination

Gifted with tiny fresh figs from a neighbor’s tree, mine didn’t even need to be chopped. You should have seen how cute they were before disappearing into the abyss of batter. At least the flavor speaks for itself, imbued with a mellow honeyed sweetness, amplified by ribbons of fig jam that pool at the bottom in a gooey caramelized layer.

Designed to Fail

If this is your first buckle, take a moment to admire your handiwork before it goes into the oven. The fruit will sink, the cake will rise, and your carefully composed masterpiece will exist only in memory. Far from a flaw, it’s exactly what makes this dessert a keeper.

This old-fashioned buckle celebrates fresh figs at their peak, tucked into a buttery cake with ribbons of fig jam throughout. As it bakes, the fruit sinks and the cake rises to create the buckle's signature rustic look, ensuring every bite has a burst of jammy sweetness.

Ingredients

  • 1/2 Cup Vegan Butter
  • 1/4 Cup Light Brown Sugar, Firmly Packed
  • 1 Tablespoon Orange Zest
  • 1 Teaspoon Vanilla Extract
  • 1 1/4 Cups All-Purpose Flour
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • 1/2 Teaspoon Salt
  • 1/2 Teaspoon Ground Cardamom
  • 1/2 Cup Aquafaba
  • 1 Cup Fig Preserves
  • 2 - 3 Cups Fresh Figs, Destemmed and Chopped if Large
  • Confectioner's Sugar, to Garnish

Instructions

  1. Heat your oven to 350 degrees. Lightly grease a 9-inch round cake pan or fluted tart pan and set aside.
  2. In the bowl of your stand mixer with the paddle attachment installed, cream together the vegan butter, brown sugar, orange zest, and vanilla until light and fluffy.
  3. In a separate bowl, mix the flour, baking soda and powder, salt, and cardamom. Add half of the dry ingredients to stand mixer, mixing to incorporate, then follow with half of the aquafaba. Mix again until just incorporated, then repeat with the remaining dry ingredients and aquafaba. Do not over-mix; it's perfectly fine to have a slightly lumpy batter.
  4. Spread batter into the prepared pan, smoothing out the top. Drop dollops of the dig preserves across the surface and use a butter knife to swirl them throughout. Sprinkle the figs evenly across the top, gently pressing them in.
  5. Bake 45 - 55 minutes, until top is darkly browned and cooked through, but still gooey with fruit at the bottom. Let cool for at least 15 minutes before lightly dusting with confectioner's sugar. Enjoy warm or at room temperature.
