I’m drooling. Everything looks so good. I could go fajita nachos for dinner tonight. We ate in a Mexican restaurant last week and I had something similar. Yum

I make all of my tortillas, both wheat flour (ever changing, my latest fav combo is 1 cup all purpose flour, 1 cup spelt flour, a couple of tablespoons of freshly ground flax seed), and corn (Bob’s Red Mill Organic Masa is good; I use a–beloved– cast iron tortilla press). I appreciate this tribute to the tortilla, which brings back memories of a year of volunteering in Nicaragua and Guatemala, and watching and learning how tortillas are made in different socio-economic circumstances, and their importance in the daily meals. Tortillas are, perhaps, my favorite “bread”. Thanks!

That sounds marvelous! As the foundation of so many meals, quality tortillas are invaluable and make a huge difference. Anyone who makes their own tortillas has my respect, and envy!
