Ingredients
- 2 Tablespoons Olive Oil
- 1/2 Medium Yellow Onion, Finely Diced
- 4 Cloves Garlic, Minced
- 1/2 Teaspoon Salt
- 8 Ounces Vegan Breakfast Sausage, Crumbled
- 2 - 3 Cups Kale, Roughly Chopped
- 3 Tablespoons Tomato Paste
- 8 Ounces Tofu Scramble
- 2 Lavash Flatbreads
Instructions
- Add the olive oil to a large skillet over medium heat. Once shimmering, add the onion and sauté until translucent, about 3 minutes. Add the minced garlic and a pinch of salt, stirring for an additional minute until fragrant.
- Introduce the crumbled vegan breakfast sausage, allowing 4 - 5 minutes for it to brown slightly. Next, toss in the kale, stirring until it wilts, about 2 to 3 minutes, then mix in the tomato paste.
- Heat the tofu scramble separately, either in the microwave or a second skillet, until hot all the way through.
- Once your filling is ready, lay out the lavash flatbreads on a clean surface. Spoon the sausage mixture evenly across each flatbread, leaving a little space at the edges for easy rolling. Top with the tofu scramble. Finally, roll each lavash into a tight spiral.
- Use a sharp knife to slice each rolled flatbread into 10 bite-sized pieces, making 20 pinwheels in all. Serve warm or at room temperature.

Love the look of these! Born in the Baltics and to Scandinavian-type food breakfast ‘cereals’ and even ordinary eggs/bacon are somewhat of a bore to me and I just love what you have done above! OK – if I use sausage it is more likely to be a lean kangaroo and I’ll probably change the kale to spinach or bok/pak choi also! And use whatever flatbread is sitting in the fridge!!
