Stubborn as a Mule

Endlessly evaluating the population at large, it’s impossible to predict exactly when or if a trend with actually come to bear, but that sure doesn’t stop us from trying. One of the most recent assessments that hit my radar was which drinks would be big this summer.

Preferences appear to be split across the country, showing a rise in appreciation for the aperol spritz and negroni in along the west coast, while easterners are more likely to quaff hard seltzer or froze to beat the heat. However, Moscow mules were indisputably on the decline across the board, having peaked in popularity long ago. Those copper mugs are so 2018.

Naturally, that’s exactly what I find myself gravitating towards.

Rather than claiming I was on board before it was cool, I’m proud to proclaim that I’m all in after it was cool. Much less pretentious, just a bit slow, I’ve discovered the charm of bracing ginger and lime over ice, spiked with the clean, crisp bite of vodka. It’s hard to go wrong with such a classic combination, which begs the question, just who is turning up their noses to proclaim it as passe? Besides, you’ve already got the cups knocking around in the back of your cabinet… What else are you going to do with them?

Meeting Russia by way of Japan, my eastern inspiration swaps vodka for sake, lime for bold, astringent yuzu juice, and adds a touch of matcha for an earthy foil. Paired with bracing ginger beer for both a sweet and spicy bite, this new blend could very well become a trend-setter after all.

Snack Happy

Blindly groping through my overstuffed bag, I fumble with the house keys, stray business cards, forgotten orphaned earrings, but of course not the target of my increasingly urgent search. It’s pushing well past the dinner hour and I’m still stuck in transit, stomach rumbling, far from a proper meal. Where are those meatless jerky strips I always tuck into the side pockets? There should at least be an old, slightly smushed protein bar languishing at the bottom. Hell, I’d even take an stale pack of crackers, pulverized to a finely powdered state right about now. Just when my desperation reaches fever pitch, I hit pay dirt: Olives.

Majestic purple Kalamata olives, briny and rich like red wine, these edible jewels are a gift straight from the Greek gods. They say that hunger is the best spice, but even without a gnawing emptiness in my stomach, they’re a real savory treat to behold. It’s not your traditional snack pack; it’s far more satisfying.

Wholly Macaroni

I couldn’t shake the question out of my head. It ran loops around my brain, echoing off the walls of my skull. Surely, there were more important matters to consider, but no. All I could think about was cheese. Mac and cheese, to be precise. It suddenly struck me that many years had passed since I revisited my previous gold standard for Stove Top-Style Macaroni and Cheese, and wondered if it would still hold up to scrutiny.

Considering the great strides that dairy-free foods have made since then, the bar had been raised to lofty heights I could have never imagined back in the day, toiling over the stove with little more than memories of the blue box to light my path. Yes, indeed, it was still good stuff… But it could certainly be better.

A few tiny tweaks make a world of difference. It’s all about incorporating the subtle umami nuances and sharp bite that a good aged cheddar might impart, but nothing earth-shaking that would come as a wild departure from the norm. Just a bit more finesse, some higher-quality ingredients, and a better understanding of the alchemy that flavors undergo with varying temperature and time.

Toeing the line between healthy and indulgent, the new and improved sauce introduces a handful of red lentils for body and viscosity, with the side benefit of adding extra protein and fiber into the mix. At the same time, a fearless dose of vegan butter creates that inimitable velvety texture also known as kokumi, enhancing and amplifying flavors, much like salt. Nutritional yeast is essential, of course, but joining it in savory harmony is a dash of miso, lending a greater depth of umami flavor in every cheesy, creamy bite.

Yes, it’s a bit more involved than tearing open a packet of dried dairy-derived mystery powder, but there’s no going back once you taste the difference.

Sip and Slurp Through Summer

Chill out. Strawberries might sound like an unconventional addition to the classic red tomato gazpacho, but they’re nothing to lose your cool over.

Given a surplus of the highly perishable rubies and an oppressive heatwave to contend with, my tastes quickly skewed toward the fast, easy, and refreshing side. Gazpacho must always be on hand for days like this; it was a natural, perhaps inevitable combination.

Balancing sweetness with savory undertones, the subtle bite of vinegar, and fresh verdant pop of basil, it’s a delicious study in contrasts. Don’t let the fruity feature scare you off! It’s not a vegetable-forward smoothie, but you may still want to drink it straight from the blender.

Poppycock

Delicious, nutritious, and an illicit narcotic? Poppy seeds are an excellent source of fiber, omega-3 fatty acids, and several essential minerals, including calcium, iron, magnesium, manganese, phosphorus and zinc, to say nothing of the morphine residue that may remaining after harvesting from opium poppies.

Yes, opium which is also an excellent source of heroin, morphine, and codeine. While it’s true that an “overdose” may genuinely make you fail a drug test, the seeds themselves contain none of the potent drug. No need to lock your spice rack at night or keep a surveillance camera on your baking supplies; while a junkie might be sorely disappointed, I’d say that the flavor they offer is still powerfully addictive.

Nut and seed blends are gaining traction in the non-dairy aisle, but no one seems to appreciate the power of the poppy seed. This could be said across the board, however, as poor, misunderstood poppy seeds rarely get top billing in any dish. Every bit as capable of creating a creamy, dreamy, dairy-free drink, their subtle nutty flavor bears intoxicating nuances of both sweet and savory notes in every sip.

Toast them to enhance that elusive, rarely touted taste, or keep it simple with a more subtle, straightforward blitz. A mixture of oats and almonds lend a richness and body that could rival anything fresh off the farm.

If you can resist the urge to lift the entire blender right to your lips to gulp down the entire milky amalgamation as is, it happens to make a brilliant creamer for iced coffee, too. Don’t say I didn’t warn you when poppy seed lattes become the next big trend in a month… It really is an addictive drink.

Going Bananas This Summer

Officially, summer has arrived. It’s certainly felt that way for the past month, but at least the weather and the calendar are finally in agreement. Longer days, warmer nights, and of course, cooler eats are here at last. While some people live for the winter holidays, I’d make a strong case for classifying this fleeting moment as the best time of year.

Beautiful weather beckons, teasing me out of the house early in the day, tempting me away from work and towards play. The last thing I want is to be stuck in a hot, stuffy kitchen. I’d much rather reach for any easy treat like Voortman wafer cookies and be on my way. They make so many flavors that there’s always something to suit the season. Made with real fruit, nothing artificial, the flavors are all stunningly fresh.

The light, crisp wafers give way to soft creme filling, both crunchy and smooth, satisfying with every bite. Right now, the banana wafer cookies occupy that prime spot in my snacking routine. Evoking memories of crunchy banana candies of bygone childhood delights, the real magic happens when they’re stored in the fridge. Chilled, they suddenly taste like a fruit smoothie in stick form. That serendipitous discovery happened quite accidentally, stemming from an urge to clear overflowing counters with no shelf space remaining. Into the fridge the package of cookies went, and out came a brand new treat.

Of course, I couldn’t leave well enough alone right there. Obviously, what’s great alone could be spectacular with just a bit more finesse. No-churn banana ice cream, enlightened with a dollop of tangy dairy-free yogurt, perches temptingly on these edible sticks, every bite as satisfying and wholly refreshing as the last.

Chill out, enjoy the heat of summer, but don’t let the opportunity to indulge in more whimsical sweet pleasures melt away.
