Stick with Kati Rolls

Kati rolls are a special sort of food that exists beyond spoken language. It needs no translation, even if this is the first time you’ve heard such a word. One glance and all the mysteries are revealed. The kati roll is fluent in delicious, which is the most compelling form of communication on everyone’s lips.

What are kati rolls?

Soft flatbread, lightly crisped on the outside, wraps around an aromatic and highly spiced filling; the epitome of indispensable street food. Kati rolls are strikingly similar to fajitas in construction or open-ended burritos when finished. Originally, skewer-roasted kebabs were at the heart of it all, beginning life not unlike our modern day hot dog. Thus, the name comes from the Bengali word kathi, which means “stick,” in reference to the bamboo sticks used for cooking the protein. The bread is merely the vehicle, but simultaneously an essential part of the whole build.

The most “complicated” part of making kathi rolls to preparing the chapati (AKA roti.) I say this in quotes because it’s an incredibly simple flatbread made from minimal, common pantry staples that’s well within everyone’s grasp.

Even if you struggle with bread baking, this is a great way to ease into the art, since there’s no yeast involved and you truly can’t over-knead it. Gently charred by pan-frying on the stove top , you don’t need to preheat your oven, either. The biggest struggle can be carving out the time on a busy weeknight, to which I say: Don’t sweat the details.

Traditionally, the flatbread of choice for making kati rolls has been paratha. Infused with buttery, flaky layers throughout, that particular unleavened dough does take a bit more finesse. I’d rather save such intensive labor and overall decadence for a stand-alone snack, ideally with a side of chutney or curry sauce for dipping.

What are good alternatives to homemade chapati?

While all flatbread are not created equal, you can absolutely make mouthwatering kathi rolls using a wide range of ready-made solutions with great success. For best results, brush them with oil and lightly griddle them on both sides before rolling to make them more flexible. A few options include:

It’s what’s on the inside that counts

Beef, lamb, and goat kebabs no longer need apply for this starring role. In fact, the most popular fillings are now largely vegetarian. Designed to be eaten on the go, kati rolls are ideal for make-ahead meals, packed lunches, and traveling snacks. After assembling the rolls, wrap them individually in foil and freeze for up to 6 months. Whenever you’re ready to eat, either simply let them thaw out and enjoy at room temperature, or stick them in a toaster over or air fryer for a few minutes until warm and crispy. Keep chutney or hot sauce separate to apply as desired.

You don’t even need a recipe to make a kati roll. It could be made completely from leftovers, restaurant takeout, or prepared foods from the grocery store. Kati rolls are whatever you want them to be, whether they’re made 100% from scratch or with zero cooking involved. The only way you can go wrong is if you don’t start rolling in the first place.

Fritter the Day Away

From the beginning of time, when humans discovered fire and the very concept of cooking itself, fritters have bubbled up across all cultures. Defined primarily as battered and fried morsels, the specifics that flavor these nuggets are limitless. Vegetables, fruits, or proteins could be the main feature, or a combination, or none of the above. The dough could be raised by yeast or baking soda or eggs, or left unleavened altogether. Served at any meal from day break to nightfall and in between, fritters can be sweet or savory, spicy or mild, served hot or cold. When you start trying to pin down exactly what a fritter is, it might be easier to describe what it isn’t instead.

Most Americans are familiar with simple, comforting fritters born primarily in the south; apple fritters are a staple lining in any decent pink doughnut shop box, while corn fritters are essential summer snacks. The French have beignets, while Italians call them bigne. Pakora hail from India, binding together bits of onion, potatoes, cauliflower or other vegetables in savory, seasoned chickpea flour.

While I could write a whole dissertation about the diverse world of fritters, I’d like to draw attention to a less celebrated sort today: the black eyed pea fritter. Known also as accara, this legume-based variant is primarily found in Africa. You could almost think of them as falafel from another motherland. Dried pulses blended coarsely with spices, fried until golden and crisp, they’re irresistible eaten out of hand as a snack, but work well in everything from sandwiches to salads.

This recipe comes from Chef Philip Gelb, who in turn adapted it from Bryant Terry. I was fortunate enough to first taste this beloved street food first hand, at one of his cooking classes eons ago. They were part of a lavish Jamaican spread including jerk cauliflower, calaloo, run down stew, and peas and rice, but I daresay they stole the show. Paired with a tart, tangy, sweet, and spicy tamarind chutney, I have a feeling you’ll fall in love with them, too.

Raise a Stink

With a name like “stinky tofu,” the deck is already stacked against this polarizing snack. Granted, the title is entirely well-earned, accurate if somewhat blunt, and not merely a result of cultural misunderstanding. The aroma will hit you a block away, wafting through night markets like a pungent homing beacon for those in the know. Tenaciously clinging to hair and clothing, the distinctive perfume follows you home, infused simply through proximity, whether or not you chose to partake. To the uninitiated or unadventurous, the scent is not exactly one you’d want to bottle and put in a diffuser. Rotting garbage, overflowing toilets, and decaying fish are sometimes cited as less favorable comparisons, yet fervent fans will travel an hour or more to reach their favorite hawker, slinging only the most odoriferous options imaginable.

Do you like kombucha? Okay, then what about blue cheese? If you can stomach that, how do you feel about durian? Funky, fermented cubes of tofu is an acquired taste that may not be for everyone, particularly for western palates unaccustomed to such ripe stank. Though most flavor is discerned through our olfactory experience rather than our taste buds, the best renditions taste relatively mild in contrast to the assertive, pervasive stench.

Before sniffing out this controversial staple, be forewarned that most stinky tofu (written as 臭豆腐 or chòu dòufu) is not vegan. Traditionally fermented in a brine made with spoiled milk, fish innards, and/or dried shrimp, this “secret sauce” tends to be a closely guarded family secret, never to be disclosed under threat of death (or disownment.) In Asia, if you don’t speak the language fluently, your best bet is to start at dedicated veggie or Buddhist establishments. In the US, where dietary restrictions are the norm rather than the exception, you should be able to discern if there are any dairy or seafood additions, if not a full list of ingredients.

Texture is almost as critical as the infamously musty, gamey taste. Preparations run the gamut from practically raw to fried within an inch of their lives, but my favorite sort is deep fried, resoundingly crunchy on the outside, firm and meaty yet almost silky on the inside. The softer the tofu, the funkier the flavor, so it takes a bold eater to spring for those barely steamed squares instead.

Condiments play an essential role in taming this tofu, each seasoned with an equally heavy hand to provide sufficient contrast. Fiery hot sauce and kimchi, sharp black vinegar, sweet and salty pickled vegetables, and crunchy garlic are all common and all highly recommended. Intense, bold flavors envelop your entire consciousness, punching harder with every subsequent bite, demanding your full attention from start to finish. It’s no passive grab-and-go snack, but a noteworthy event, even if it becomes a daily indulgence. .

In China and Taiwan, stinky tofu is classic comfort food, cheap and satisfying, great with (or after) a few drinks, and readily available all day, any day.
