How on earth did I end up with so much vinegar?

Surveying the state of my pantry, you’d think I was in the pickling business. Rice vinegar, white vinegar, apple cider vinegar, balsamic vinegar, red wine vinegar, coconut vinegar, champagne vinegar, all in attendance, front and center on the shelves, to say nothing of the reductions, infusions, and blends lurking in back.

Tart, tangy liquids made through the fermentation of ethanol alcohol are the secret ingredients in the earliest recorded attempts at home cooking. The evidence is there, literally written in stone, all cross this tiny blue marble known as planet earth.

Vinegar, or more broadly acid of any variety is the real secret ingredient to any successfully balanced dish. Instantly heightening flavors much the way that salt and sugar can, without spiking blood pressure or tempting hyperglycemia, just a splash goes a long way in everything from marinara sauce to ice cream. Weaving seamlessly into the grander flavor tapestry, you’d never know this humble player was the one knitting everything together behind the scenes. That is, unless you chose to fully embrace such a sour superstar.

Adobo is the acidic perfect example. Leaning heavily into a pungent brew of vinegar, soy sauce, garlic, bay leaves, and black peppercorns, it’s punchy and bold, tart and tangy, unapologetically, fiercely flavorful. Adobo is not the kind of dish you serve with delicate white wine on your finest plates; adobo is a brash party-starter, promising a raucous good time.

Every Filipino family has their own recipe, claiming theirs to be the best of the batch, and I certainly cannot compete with such fervent claims. I can, however, approximate something wholly delicious inspired by the art form, making it quicker, easier, and of course, much more vegan than traditional renditions.

Meaty mushrooms and chunks of seitan take the place of long-simmered beef, automatically adding a rich, deeply umami taste. Speaking to the versatility of vinegar itself, even while prominently highlighted in this Filipino staple, any range of options, or even a blend will kick things up just as brilliantly. This is a good opportunity to clear out the pantry of any odd drips and drabs leftover, should you obsessively hold on to those little bottles, too.

Adobo is possibly even better the day after cooking, so I’d implore you to double the recipe for a generous second helping later down the road. It will be tough to keep around in any great quantity no matter what.

Lump Sum

The first time I heard the term “lumpia,” I thought it was a quirky insult. As in, “yo mama’s so lumpia…” and fill in the blank. The real insult is that lumpia aren’t well known throughout the US to begin with. Culinary trendsetters keep proclaiming that Filipino food will be the next big craze, year after year, but I just haven’t seen it take hold as promised. While you can’t walk a full city block without passing at least one pizza parlor or sushi bar, you’d be lucky to stumble across a single Filipino restaurant in an entire metropolitan area.

What gives? Why aren’t kids begging their parents for sizzling platters as a Friday night treat? Where are all the long-simmered stews and punchy, vinegar-spiked sauces? So many of the classic staples share Malaysian, Indonesian, Indian, Chinese, Spanish, and even American influences, so why don’t they translate the same way overseas?

Lumpia should be considered the gateway dish, an easy introduction to this true melting pot of flavors. Like common spring rolls or egg rolls, the concept itself is highly flexible. Fillings can be either sweet or savory, bundled together in thin wheat wrappers, and served either fresh or deep-fried. Let’s be real though: The best, and most popular sort are fried to crispy, golden-brown perfection, and dunked into a sour, salty, and savory dip of vinegar and soy sauce.

This particular recipe comes from Chef Reina Montenegro of Nick’s Kitchen, one of the very few vegan Filipino eateries I know of, boasting two locations in San Francisco proper. Traditionally, the most popular sort of lumpia combines vegetables like bean sprouts, string beans, and carrots with cheap cuts of meat, but you’d never miss the animal addition here. Mushroom powder makes up for the umami essence in spades, and honestly, any filling would be delicious once anointed with bubbling hot oil.

Take a bite while the rolls are still steaming hot, caramelized exteriors instantly shattering upon impact, and you’ll immediately understand the appeal. You can eat with your hands, call it a snack or a meal, and easily convince picky children to eat a rainbow of vegetables.

Mangan Tayon! Let’s Eat!

Do you ever eat with your hands? I’m not talking about little snacks like popcorn or crackers. I’m talking about full meals, hearty stews with rice and noodles, scooped up by outstretched fingers reaching across the dinner table. It flies in the face of traditional western etiquette, flagrantly breaking unspoken rules against this literal power grab while in the presence of others. Yet, far from the supposed faux pas I’d been raised to view it as since birth, this is simply the expectation at any of the meals presented by Free for Real Kitchen. No forks, no spoons, no knives, no chopsticks. Hell, no napkins, unless you get into a truly desperate mess.

Crafting a family-style Filipino Ilocano feast featuring vegan versions of traditionally meat-heavy fare, it’s a feat of modern cookery that such bold flavors could even exist in plant-based form. Dinardaraan, also known as “chocolate meat,” would be made with offal and pig’s blood anywhere else, but comes to life here with tofu, preserved turnips, shiitake mushrooms, and fermented black beans instead. Agar-based salted eggs posing as Itlog na Maalat could make anyone do a double take, based on both the uncanny appearance and sulfuric salinity. Jackfruit makes an appearance of course, not as a meat alternative but paired with banana blossoms in the Adobong Langka at Puso ng Saging, a naturally vegan preparation that dazzled with the unassuming combination of tamari, garlic, vinegar, bay leaf, and coconut milk.

More beguiling than the food, however, is the experience of sharing such a feast in such a visceral way with your neighbors. Strangers awkwardly shift around at first, pawing timidly at whatever mysterious mound lays closest, afraid to fully engage. With a few bites comes greater confidence, whetting the appetite for more. Conversations grow louder and deeper, hands fly farther and faster, and the whole room moves and sways in a different kind of dinner dance before long. Dropping formalities to boldly share space allows in a world of new flavor, along with an experience unlike any other.

Kamayan, eating with your hands, fills your heart perhaps even more so than your stomach. No matter how stuffed you end up after heartily partaking in over a dozen delicacies and dessert, warm memories of this communal event still last much longer.

 

Fresh Off the Boat

One of the most buzz-worthy restaurant openings of recent months, much has already been written about FOB Kitchen in Oakland, California. Filipino food is quickly gaining mainstream traction, but remains relatively rare in an elevated dining atmosphere, particularly in an accessible, approachable format. Given the circumstances, such breathless anticipation can be forgiven. Clamoring for something new, the dining public is absolutely eating this stuff up- And not just for the novelty factor.

In a culture ruled by pork, vegan options are rare at best, but not so on the menu at the Temescal treasure. FOB Kitchen goes out of their way to provide meatless eats for their diverse, discerning Californian clientele.

Tofu-mushroom adobo, the entree that earns the most critical attention, is the result of recipe testing for over a year to get the flavors just right. Garlic-forward in the best way possible, aromatic onions and peppers give this lightly stewed combination its essential character, enhanced by a generous hand with the coconut oil for a luxurious eating experience.

Ensalada talong, an unassuming eggplant salad, turned out to be the sleeper hit of the evening, dazzling with a bright vinegar dressing sprinkled across crisp jicama, tomato, with the surprising briny bite of sea asparagus woven among tender braised eggplant and shredded mango. Crunchy broken rice crackers crown the melange with a satisfying toasted note, essentially allowing eaters to indulge in forkfuls of chips and chunky dip without looking like brutes. This dish alone is worth a return visit.

Kabocha squash also dazzles with stunning depth, stewed in coconut milk alongside long beans and onions. Such simplicity belies the incredible richness of each melt-in-your-mouth soft orange cube.

Pancit sontaghon, simple glass noodles with a handful of colorful vegetables, doesn’t have quite the same sparkle, but still satisfies with its savory soy sauce-infused translucent strands.

Suman, a variation on mango sticky rice, presents the starch as a completely smooth cylinder on the plate that bears only gentle resistance to the fork. Topped with caramelized coconut crumbs, the lightly bitter notes contrast beautifully with the tropical fruit arranged on the side. Though I might personally prefer more sauce, it could probably be served in a soup bowl and I’d still have the same complaint.

Beginning life as a fledgling pop-up back in 2015, the name is an acronym for “Fresh Off the Boat,” but I truly hope they’re dropping anchor to stay a good long while.

Sari Sari, Not Sorry

It was the final food frontier, as far as my personal gustatory limits were concerned. After squandering the first half of my life as an unrepentant picky eater, my path had veered drastically into wild, unpredictable terrain to have reached this point. Plain pasta, hot dogs, and grilled cheese sandwiches dominated my food pyramid for those sad, early years, but going vegan proved a turning point that opened up my palate like nothing else. When naysayers taunted about how restrictive such a diet would be or how I would be deprived of so many edible thrills, I took it as a challenge. From that point forward, as long as it was vegan, I would try anything at least once.

Slowly, bite by bite, long-held prejudices fell by the wayside. Gnarled, earthy beets became sweet and lovable. Brussels sprouts no longer inspired fear with their rotten stench. What was once disgust gradually morphed into delight. Determined now to eliminate all food biases, just a scant handful of truly loathsome edibles stood in my way. Throughout it all, despite numerous valiant efforts, bitter melon remained my Achilles heel. No way, no how, could I find a way to tolerate that offensive flavor.

They don’t call it bitter for nothing. An arresting acrid taste is its claim to fame, and yet I was (and remain) convinced that absolutely anything can become delicious when cooked properly. After many more failed attempts than I’d care to quantify, it turns out that there are a few tricks to taming that harsh tartness.

  1. It all starts with the bitter melon itself. Pick younger, smaller specimens that are a bright lime-green color, as these vegetables grow only increasingly acerbic with age.
  2. Be certain to remove not only the seeds within, but also all of the spongy membrane. Much like the pith of an orange, it contains even more concentrated sour flavor.
  3. Salt aggressively. The salt will draw out moisture and bitterness, making it both tastier and easier to cook with.
  4. Blanch in boiling water, and for longer than most vegetables would be able to withstand. You may lose a little bit of structural integrity, but I found that about 8 – 10 minutes of boiling made a huge difference in overall palatability.

Got all that? Good! Like magic, the much maligned bitter melon can now contribute a balanced tartness to any savory dish.

Ingredients

  • 1 Medium Bitter Melon
  • 2 Tablespoons Olive Oil
  • 4 Garlic Cloves, Finely Minced
  • 1-Inch Fresh Ginger, Peeled, and Finely Minced
  • 8 Ounces Seitan, Torn or Chopped into 1/2-Inch Chunks
  • 2 Medium Tomatoes, Diced
  • 2 Medium Filipino/Long Eggplants, Sliced into 1/2-Inch Rounds
  • 1/3 Pound String Beans, Cut into 1-Inch Pieces
  • 2 Tablespoons Fermented Black Bean Sauce
  • 2 Tablespoons Rice Vinegar
  • 2 Tablespoons Tomato Paste
  • 2 Tablespoons Soy Sauce
  • 5 – 6 Cups Vegetable Broth
  • 1 Tablespoon Instant Wakame Flakes

Instructions

  1. You’ll want to start preparing the bitter melon first, since it requires the most time and labor. The rest of the stew assembly will fly by!
  2. Slice the bitter melon in half lengthwise and use a large spoon to scoop and scrape out the seeds. Remove any additional inner membrane as well, and discard. Slice the seeded gourd into 1/4-inch half moons and toss them in a large bowl with a generous pinch of salt. Don’t be shy because it will be washed away later on; go for 1/2 teaspoon at least. Let sit for at least 20 minutes while you slice and chop the remaining vegetables.
  3. Bring a medium pot of water up to a roiling boil. Add in the salted bitter melon and cook for about 10 minutes. Drain and immediately rinse with cold water.
  4. Return the pot to the stove over medium heat and add the oil. Once shimmering gently, begin to saute the garlic and ginger. After two minutes, introduce the seitan. Stir frequently and cook until the mixture is aromatic and the chunks of seitan are lightly browned all over; about 10 minutes. Add in the rest of the vegetables together, sauteing for an additional 5 – 8 minutes.
  5. Pour in the first 5 cups of vegetable broth along with all of the remaining ingredients. Mix well, reduce the heat to medium-low, and simmer for about 20 minutes, until all of the vegetables are fork-tender. Add more broth if you’d prefer a soupier stew, and serve steaming hot! Pair with sticky rice to complete the meal.

Notes
