Elote dip is not to be missed this summer while fresh corn is juicy, super sweet, and abundant. Truth be told, the approach is merely a form of esquites, which means the kernels have been cut off the cob and mixed with the topping in a cup, usually eaten with a fork. An edible vessel like tortilla chips is just much more fun.
Mark me down as a big fan of anything @theUnlimeat makes. Right now, I'm enamoured with their Korean beef, which I've utterly corrupted in this odd fusion take on fresh spring rolls, because I will wrap anything in rice paper if no one stops me. Just slather the meat in lots of chopped garlic, a splash of soy sauce and olive oil, then air fry at 370 for just 6 - 8 minutes until crispy around the edges. Roll it along with some vermicelli rice noodles, shredded carrots, cucumbers, avocado, basil, mint, and cilantro, or anything else you like.
While far from innovative, I feel it's important to point out that a creamsicles wine cooler is always welcome on any hot summer day. It's built exactly as it sounds; don't overthink it and just enjoy.
We have a strong contender for a new favorite mapo tofu right here! @MeConBistro, though specializing primarily in Vietnamese cuisine, pulls out some stunning pan-Asian entrees as well. Just as for the porkless version and you'll get toothsome julienned woodear mushrooms instead, adding umami power to a spicy, rich sauce enrobing tender tofu cubes. Yes, this one goes on the hit list, for sure.
