Creamy, deeply soothing, rich yet not heavy, it’s a remarkable study in balance. Subtle hints of cinnamon perfume the bowl, marrying beautifully with notes of pepper and a touch of nutmeg. Even better than the average rice stew, toothsome pumpkin seeds are scattered throughout, lending a hearty bite that fully satisfies all the senses.

Not to get hyperbolic, but the Green Split Pea Soup is nothing short of a revelation. Rather than the murky morass of over-boiled legumes, there are full, whole peas in here! Like oversized caviar, they burst in juicy bites, lending an air of luxury to this once humble stew. Easily the best rendition of the concept I’ve encountered to date, it’s fantastic enjoyed cold on a hot summer’s day, too.

Take your taste buds globe trotting with a stop in Italy and France for a bowlful of Garden Minestrone and Butternut Squash Ratatouille. Leaning into a tomato base with savory herb seasoning, the minestrone focuses in on zucchini and white beans, whereas the ratatouille, true to the name, is all about that orange autumn gourd. Happily, neither one taste out of season, appealing to the senses all year round.

Billed as one of the “light” brews, Fennel Consommé presents a zesty citrus-infused broth with softly simmered pieces of licorice-y fennel. An excellent appetizer or palate cleanser between courses, it sings of sunny spring days. You can practically taste the morning dew still clinging to those leafy fronds.

This was a favorite back in the day, and I couldn’t be more thrilled to be reunited at last.

Exploring deeper into unknown territory, while The Tangiers Stew isn’t one I was familiar with from previous visits to the brick-and-mortar establishment, it would have easily made my hit list for repeat orders. In fact, it was so good, I willfully flaunted reheating instructions to eat it chilled, straight out of the container! Mercifully, for hot days ahead and blisteringly busy schedules, everything included is fully cooked and ready to eat. Sauced and spiced zucchini dazzles with the ginger-lemon sauce saturating every cell, perched atop a bed of toothsome black forbidden rice. Slivered, toasted almonds remain as crisp as can be, lending a resounding crunch to the harmonious ensemble.

Translucent kelp noodles from The Ha Long Bay glisten in the sunshine, glowing with the golden hue of simmered carrots and parsley pistou. Wok this way (or just sautée) for a Vietnamese-inspired twist on New American Cuisine, drawing inspiration from the tenets of the raw food movement. Kelp noodles, made without flour or starch, are a rare find on any menu. Their unique texture is an ideal blank canvas for such an innovative palate of spices and herbs. Tender mushrooms and zucchini are woven between strands, playing umami chords for a completely symphonic eating experience.

Struggling to get down enough greens is a constant challenge even in the best of times, let alone given difficulty accessing enough fresh produce en masse. Gulp down a few sips of Cancun Juice to win this battle with ease. Swampy green from spirulina, thick as a blended smoothie, the taste is pure pineapple refreshment despite the intimidating appearance.

Appeasing the sweet tooth, breakfasts and desserts seemed interchangeable to me, as it should be when only natural, nutrient-dense sweeteners are involved. The Barcelona, a berry and hemp parfait, stacks up layers of creamy custard and fresh strawberries, that actually retain their textural integrity. It’s a small but noteworthy element; you’ll never find that in a frozen meal solution. Meanwhile, The Nancy is aptly named only because I continuously transpose the letters to call it The Fancy. A coconut base bursting with roasted blueberries, pistachios, and flax seed crumble would be right at home in any high-end hipster enclave. A bit simpler but no less impressive is The Manchester, flawlessly smooth and creamy, a strawberry pot-de-creme made possible only with flawless fruit as the foundation. While the The Bordeaux Chocolate Mousse was most clearly intended for an after dinner treat, but the fact that it’s made up dates and yams suggests that it’s an equally suitable morning starter. Chocoholics, rejoice; you can indulge in all the cocoa goodness your heart desires, deep and rich and silky, without any regrets later in the day. These tiny but mighty little jars contain the fuel to start out strong and end up satisfied.

Of course, any decent diet must include snacks, and the midday morsels included here don’t disappoint. The Marrakesh Jewels take two juicy, soft Medjool dates and stuff them to the brim with pistachio praline and cashew lemon chia, respectively. If hunger begins to nag like a petulant child between meals, a little bit goes a long way with these potent bites.
Genuine cookie monsters can find a more conventional pastry replacement in The Istanbul Cookie, a tahini-rye chocolate chip cookie that boasts an impressive 80% of your iron requirements per day. You’d never know it based on flavor, which is evocative of pure childhood comfort, hold the butter and eggs.

Food delivery is not only the way of the future, it’s the way of survival, now. Critical on both sides of that equation, consumers and producers alike thrash about in uncharted waters as the tides continue to turn. Safer than risking exposure from shopping and schlepping, getting food direct to doorsteps could save us amidst quarantine constraints. If only it was all so simple, though. Grocery stores are overwhelmed by demand, local chefs can barely keep the lights on, and third party couriers are throttled by ineffective apps. No one was prepared for this abrupt sea change.

Some, however, are nimble enough to raise the sails and correct course at the first sign of trouble. In this case, they’re actually Nybll.

Previously serving corporate clients for in-office catering, “business as usual” was anything but, when work from home orders shut down previously thriving hubs. Quickly shifting gears to reach workers where they live, the focus on individual distribution opened up accessibility to all hungry, home-bound clients.

It’s tough picking favorites, but the gentle sweetness of the Candied Tempeh, paired with tender Herbed Brown Rice with Garbanzo Beans + Roasted Carrots easily elevated this meal to the top rank. Understated, simple flavors blossom with the gentle touch of a professional, bolstered by the vibrancy of fresh high-quality ingredients.

Injecting a bold touch of intrigue into the mix, the Vegan Meatballs + Roasted Sweet Potatoes defies easy explanation. Coated in a creamy, saffron-spiked sauce, hearty meatless rounds tumble among bites of fennel and skin-on chunks of everyone’s favorite orange tuber. Paired with Grilled Zucchini + Harissa Cauliflower, it’s a spicy, invigorating combination unlike anything else you might be able to order for takeout.

Evoking happy memories of summer picnics, Loaded Vegan Pasta Salad really hit the spot on these unseasonably warm days. Sun-kissed tomatoes drape themselves seductively around penne pasta, broccoli florets, and strips of red bell pepper. For someone craving a taste of the great outdoors, this really nails the experience in a safe, sanitary package to enjoy at home.

It takes a lot for me to get excited about a kale salad, but the Caribbean Superfood Salad + Jerk Mushrooms does just that. Zesty orange dressing brightens the crisp leaves, interspersed with coconut flakes and shredded carrot. A smashed plantain patty adds substance with style, while the slightly spicy, sweet, and smoky cremini are the crowning jewels on this tropical regalia.

Do you eat food? Then boy howdy, do I have a book for you. Yes, that’s certainly painting with a broad brush, but Laura Theodore’s Vegan for Everyone really is a cookbook built to accommodate each and every eater out there, no matter age, location, tastes, and time constraints.

This is the essential reference built of simple staple recipes to get you started or keep you going on a plant-based path, transforming everyday ingredients into remarkable meals. No experience necessary, because these formulas are built upon basic cooking skills, even easy enough for a toddler to mash together in some cases. At a time when ingredients can be limited and patience is wearing thin, such instant gratification is a true comfort to revel in.

Visually inspiring from cover to cover, there’s a mouthwatering photo accompanying almost all of the 160 recipes within. Beyond the food itself, there’s a real wealth of information for new vegans or reluctant cooks. Get detailed shopping lists to build out a plant-based pantry, organizational advice to keep your spice rack in order, and get educated on nutritional needs, all in place.

Starting bright and early with breakfasts worth waking up for, the promise of Coconut Chocolate Chip Muffins (page 46) certainly gave me something to look forward to on a few very dreary mornings. Effortless to throw together, just as promised, the tender crumb cradled just the right ratio of decadent chocolate chunks to toothsome coconut shreds. Amazingly moist yet low in fat, I was honestly stunned by the texture, considering there was no added oil. Balancing out healthy impulses and more indulgent cravings, these are a great option to prepare in advance to grab and go.

Eggs are off the menu of course, but you’d never know it by one bit of the Vegan Egg Salad for Everyone (page 140.) Sunny yellow tofu is mashed into creamy submission with the very same salty, savory comfort that defines the classic hard-boiled rendition. Granted, I had to substitute capers for the prescribed green olives based on grocery shortages, but the flavor didn’t seem to suffer one bit. Sandwiched between two hearty slices of homemade molasses wheat bread, lunch was served in about 5 minutes flat.

Simmer down and get cozy, because the Red Lentil-Potato Curry Soup (page 132) is like a warm blanket wrapping your entire body with soothing energy. Thickened by legumes alone, each spoonful has real body and soul. I did double down on the curry powder to get the spice just right, but that easy adaptability is part of its beauty. Season to taste to suit any palate, whether you keep it mild for the kids or wild for the hot-blooded chili lovers among us.

Cold peanut noodles are already a lightning-fast staple for eating on the run, but if you can believe it, the Peanut-y Carrot “Noodles” (page 186) are even faster than conventional approaches. By swapping out spiralized carrots for starchy pasta, you don’t even have to cook these vegetable strands to make them delicious. Better yet, they lighten the dish considerably, meaning you can slather on extra peanut sauce without a second thought.

Fearlessly springing forward, onward to brighter days and warmer weather, it’s time to emerge from hibernation at last. Blossoming alongside the flowers, as tender green buds unfurl their fragrant sails into the wind, is the urge to raise a glass in celebration. Pleasantly grassy, yet slightly floral with a hint of jasmine, it’s unlike any other white I’ve encountered. Lingering long after each taste, the surprisingly assertive flavor can stand up to stronger dishes, like the funky blue cheese on a classic wedge salad.

When you want a juicy, luscious white wine that’s as sumptuous in the glass as it is on the plate, look no further than the 2018 Tinpot Hut Sauvignon Blanc Marlborough New Zealand. Dazzlingly acidic with a sharp nose combining lemons, lychees, and limes, it’s strong enough to take the heat in the kitchen. Naturally, those fickle ferns can be a bit tough to find early in the season, so I’m happy to report that it’s just as delicious with your garden variety zucchini, too. Fava beans or artichoke hearts would be equally delicious substitutions, verdant and elegant, ideal for tangling around al dente strands of pasta.
