Am not vegetarian as you would know but eat Asian from right across the Continent about 75% of the time . . . I love very, very hot but most of these are not . . . they are right across the various cultures and the ones fried are health wise the ones I will not touch . . . the mapo tofu and the eggplant dish would be nice to try :) !
