Greeking out with Popit!

June, here so soon? Breezy, beautiful month of June, she’s here before you know it, but gone in the blink of an eye. Inviting us back outside with a radiant warmth, now is the time get that free Vitamin D and soak in the sun. Naturally, dining alfresco is my favorite opportunity to do so, with a homemade meal at the ready whenever weather permits.

Eating outside demands a bit more preparation than cobbling together a meal on the fly at home. That’s why I’m turning to Popit! once more to plan ahead. Stocking the fridge at quiet times means I can just enjoy when I get a break in the action, or perhaps a break in the clouds on a rainy day. These accommodating containers actually make food last longer because they’re 100% airtight, so you’ll never have to worry about spoilage or food waste if sudden storms derail your excursion.

What to put in these efficient boxes, you ask? This month, it’s all Greek to me.

The love of pasta transcends all cultural boundaries and knows no seasonal limitations. As the weather warms and cravings skew lighter, this infinitely adaptable noodle is flexible enough to follow suit. Pasta salad is a summertime picnic staple, gleaming in all the colors of the rainbow with any number of fresh vegetables tumbling over twists or tubes, nestled in shells or toppling out of trumpets. The best salads have a distinct theme to unite these otherwise disparate additions, and an eye for presentation certainly doesn’t hurt.

Greek salad lends itself beautifully to a pasta-based adaptation, ripe with briny olives, gem-like cherry tomatoes, tender artichoke hearts, and crisp cucumbers. Glistening with a light coat of red wine vinaigrette, the whole melange is gently kissed by the invigorating breath of fresh herbs.

Laid out in neat rows like a fancy composed salad, it takes on an air of greater prominence, turning the everyday outing into a special occasion. Of course, feel free to toss everything together for simplicity’s sake. It will taste every bit as good, even if it gets jostled around in your bag while in transit. If closed properly, Popit! guarantees there won’t be any spills whatsoever. You could even take soup or gravy anywhere wanderlust beckons. You certainly don’t have to worry about oil stains from leaky seals, so go ahead, throw caution to the wind and take it outside!

If there’s a chill in the air, don’t despair. This meal is just as delicious heated. You don’t even need to take it out of the container. Popit! can be used in the microwave; simply remove the lid to avoid a vacuum from being formed, stir well, and dig in.

Getting hungry, or just getting tired of being stuck indoors? Grab a Greek pasta box and get out there. Lunch is ready whenever you are.

Introducing: Meal Planning with Popit!

Perhaps you’ve seen the immaculate rows of perfectly curated lunchboxes captured for posterity on Instagram, or entire shelves dedicated to meal prep and make-ahead recipes in bookstores. Meal planning is all the rage these days, though it seems daunting to dive right in.

Meal planning is not just for busy office workers or students on the go. Even if you’re eating breakfast, lunch, and dinner at home, everyone can reap the benefits:

  • Prevent mindless snacking by setting aside perfect portions.
  • Save time by cooking in batches.
  • Stress less by knowing exactly what’s for dinner.
  • Maximize your budget by resisting the lure of takeout.
  • Reduce food waste by using up what you already have.

The best containers are durable, lightweight, leak-proof, microwave- and freezer-friendly, easy to clean, and available in multiple sizes. That’s why I’ve chosen Popit! to house my meals. They offer all that, in both glass and BPA-free plastic food storage containers, which snap closed with airtight locking lids. No leaking, no cracking, no discoloring here. Plus, they conveniently nest together for space-saving storage.

Popit! has made it possible to bring you a bold new series featuring fresh recipes every month, to help fill the gaps in your daily menu. I’m excited to kick things off with a simple, satisfying burrito bowl worth throwing a fiesta for.

Brains and beauty go hand in hand for this well-balanced bundle. Colorful, crisp vegetables sit comfortably on a bed of fluffy cilantro rice, with a hearty scoop of black beans for a complete protein complement. Rich, thick avocado crema gets packed alongside to keep everything fresh, but I wouldn’t blame you for breaking out the chips to polish off the final drops. It’s everything you could ask for in a properly loaded burrito, minus the grease, stodgy flour tortilla, and potential wrap malfunctions.

Served cold, straight out of the fridge, at room temperature on-the-go, warmed lightly in the microwave, or hot from the moment it’s made, it’s a delicious combination at any temperature. Designed for two servings, it could be one lunch for you and your partner, two lunches for you, OR double the quantities and containers to maximize your time and effort. Get twice as much delicious food out of the deal, and spend that much less time worrying about it. Get in, chow down, and get on with your life. That, my friends, is the beauty of meal planning.

Nybll and Nosh

Food delivery is not only the way of the future, it’s the way of survival, now. Critical on both sides of that equation, consumers and producers alike thrash about in uncharted waters as the tides continue to turn. Safer than risking exposure from shopping and schlepping, getting food direct to doorsteps could save us amidst quarantine constraints. If only it was all so simple, though. Grocery stores are overwhelmed by demand, local chefs can barely keep the lights on, and third party couriers are throttled by ineffective apps. No one was prepared for this abrupt sea change.

Some, however, are nimble enough to raise the sails and correct course at the first sign of trouble. In this case, they’re actually Nybll.

Previously serving corporate clients for in-office catering, “business as usual” was anything but, when work from home orders shut down previously thriving hubs. Quickly shifting gears to reach workers where they live, the focus on individual distribution opened up accessibility to all hungry, home-bound clients.

Spearheaded by Chef Kristen Thibeault, previously head of Kombu Kitchen in San Francisco, considered one of the pioneers of the modern plant-based food movement. Blending world cuisines with ayurvedic, paleo, and macrobiotic tenets, over 150 locally sourced menus reflect a passion for flavor fidelity with nutritionally dense ingredients.

Every bundle of 5, 10, or 20 weekly meals come fully loaded with a vegan option for every entree. Add-ons like soups, salads, and even fresh produce and pantry boxes make this an invaluable resource for one-stop grocery shopping. Prepared dishes arrive individually packed so you can just heat and eat. Easily outshining any comparable complete frozen dinner, it’s the closest the average person will likely come to having their own personal chef.

Larger portions, extra proteins, and side dishes can be added to accommodate all appetites. Soup and salad can help round out any menu, or join forces for a light yet satisfying meal by themselves. This week, Mixed Greens + Beet Salad made it easy to get my greens in, especially when drizzled with a ranch-style dressing flecked with fresh dill. Soulful Tomato Bisque, luxuriously rich and thick, was a shining example of what all dairy-free cream soups should aspire to. Basil, white wine, garlic, and onion meld seamlessly in this downright buttery blend.

Skillfully etched with the flawless char of hot steel, the Lemon Herb Grilled Tofu dazzles with pungent garlic butter saturating its porous surface. Ample portions of Confetti Quinoa + Garlic Sauteed Kale support the starring protein with surprising depth.

It’s tough picking favorites, but the gentle sweetness of the Candied Tempeh, paired with tender Herbed Brown Rice with Garbanzo Beans + Roasted Carrots easily elevated this meal to the top rank. Understated, simple flavors blossom with the gentle touch of a professional, bolstered by the vibrancy of fresh high-quality ingredients.

Injecting a bold touch of intrigue into the mix, the Vegan Meatballs + Roasted Sweet Potatoes defies easy explanation. Coated in a creamy, saffron-spiked sauce, hearty meatless rounds tumble among bites of fennel and skin-on chunks of everyone’s favorite orange tuber. Paired with Grilled Zucchini + Harissa Cauliflower, it’s a spicy, invigorating combination unlike anything else you might be able to order for takeout.

Evoking happy memories of summer picnics, Loaded Vegan Pasta Salad really hit the spot on these unseasonably warm days. Sun-kissed tomatoes drape themselves seductively around penne pasta, broccoli florets, and strips of red bell pepper. For someone craving a taste of the great outdoors, this really nails the experience in a safe, sanitary package to enjoy at home.

It takes a lot for me to get excited about a kale salad, but the Caribbean Superfood Salad + Jerk Mushrooms does just that. Zesty orange dressing brightens the crisp leaves, interspersed with coconut flakes and shredded carrot. A smashed plantain patty adds substance with style, while the slightly spicy, sweet, and smoky cremini are the crowning jewels on this tropical regalia.

Nybll currently serves Los Angeles and the San Francisco Bay Area. If your zip code falls within that range, do yourself the kindness of placing an order. Skip the usual takeout fare, give yourself a break from cooking duties, and enjoy the peace of mind knowing that shortages won’t deplete your pantry. Now THAT is true comfort food.

Creativity in a Vacuum

Imagine you’re wheeling a grocery cart loaded with fresh, carefully selected, and thoughtfully purchased foods through a parking lot, out to your car. You’re a conscious consumer, opting for organics whenever possible, looking for Fair Trade and Equal Exchange certifications, reading nutrition labels from beginning to end. You load the trunk, gently tucking four bags into the mesh cargo net so they won’t tumble in transit, pull down the sunshade to keep everything cool, and gently click the latch closed. You begin to drive away, when out of the corner of your eye, you see the cart, still holding one more bag, full of food. Inexplicably, you continue on your way home, leaving it to rot in the midday sun.

It’s a dramatization of reality, but a reality we must face nonetheless. Americans waste as much as 20% of the food they purchase, despite the best intentions. Whether it’s an overzealous purchase of prime produce or grand cooking plans that never come to fruition, the old, wilted, moldy, and shriveled results are every bit as inedible. If you’re buying in bulk or merely buying with an eye towards long-term storage, you might as well flush 1/5th of your paycheck down the toilet if you don’t invest in a vacuum sealer.

By removing the excess oxygen surrounding your food, you’re slowing the natural decaying process causing bacterial growth, which keeps everything from fruits to nuts fresh up to five times longer than when simply refrigerated or frozen. Heat-sealed bags are much more secure and durable than any zip top baggies or plastic cling film, which makes it a smarter choice for meal prep and travel snacks, too. Ever since the FoodSaver FM2000 came into my life, it’s saved me from more than just the mundane insult of food waste. Earning a spot on the counter as an essential culinary assistant in its own right, I’ve taken great delight in making quick pickles thanks to the accommodating canisters and containers, dabbled a bit with sous vide, and slashed marinating times in half.

This is not my first time at the vacuum sealing rodeo. Bought on a whim, my earliest model was far from inspiring. Loud as a jet plane, prone to jamming, rough on crushable foods, and notoriously prone to sealing failure, it was quickly ferreted away into the basement, where’s it’s been collecting dust ever since. FoodSaver suffers from none of these common shortcomings; it’s the #1 best-selling vacuum sealing brand for good reason, with the confidence to offer a 5-year limited warranty across the board. Operation really is child’s play, and since they’re all ETL safety certified, you really could let your kids take the reins without worry.

Easy enough to plug and play without even reading the instructions through, I do have a few quick tips for best vacuum sealing practices:

  1. Freeze liquids, marinades, or wet items in advance. Sauces and soups are still great candidates for vacuum-sealed preservation, but only if frozen solid before sealing. Otherwise, the liquid will get sucked right into the machine, which will make a huge mess and could damage the appliance.
  2. Double-bag powdery items, like flour or sugar. Place in a standard zip-top bag first, poking a tiny hole in it to get the air out without releasing all the loose particles, before tucking them into the FoodSaver bag.
  3. Leave some breathing space, especially towards the top of the bag. Avoid the temptation to stuff as much possible into every bag. If you don’t, you may not be able to get a solid seal. However, if you don’t get a good seal first time, you can try making a second seal a bit further up.

The bags are BPA-free, freezer safe, microwaveable, recyclable, washable, and even reusable! Yes, you can keep on dealing and sealing again and again with the very same bags. Simply wipe off any food or residue near the seal area if resealing partially used food, and make sure they’re clean and dry if starting anew.

Using the FoodSaver FM2000, there truly is nothing to lose.
