  1. Thankful I viewed this after lunch, Hannah. :-) I loved roasted veggies, so the carrots look good, but so does everything else. I was in Flagstaff Monday seeing snow and meeting another blogger who’s vegan. We had a lovely meal at a Thai restaurant. It’s been ages since I had Thai food, so it was so much fun. Stay safe and warm. I hope you’re not without power. Texas has really been hit hard and so many are suffering.

    1. Oh, I am SO envious. That sounds like heaven, a world away, if not a dream entirely right now. My power was out for three days and although I have light and heat again now, the water has been shut off. Pipes were bursting and my apartment complex turned it off in hopes of reducing the damage moving forward. It’s begun snowing again today… Things do not look good. Honestly, I’m pretty scared.

      1. I’m happy to hear you have light and heat now and I certainly hope it stays on. I can’t imagine how awful it is in much of Texas and some other places right now, but there’s nothing I can really do unless groups start trucking in water and food and need contributions. Stock up on what you can and stay safe! I read that water is running short and people are being told to boil it but if you don’t have power or don’t have a gas stove, you can’t even do that.

  2. Wow that Red Beet & Jackfruit Mignon looks really meaty, I would definitely want to try those out. Also those mushrooms, they look amazing, definitely its my pick of the bunch
