Always happy to have a new project to focus on, I decided a week or two ago that the next big thing should be a muffin ebook. Everyone loves muffins, right? They’re dead easy to make, with so many potential flavors and textures- It should be a smash hit! Sounds fool-proof… Although I proved to be the fool this time. Maybe I’ve temporarily lost my baking mojo, but muffins are just not my thing it seems. After dozens of batches, not all were disastrous, but they were still only edible at best. So, there will be no muffin ebook. There will, however, be plenty of muffin porn. Just think about adapting your favorite muffin recipe to incorporated these ideas, if they sound good to you.

Matcha Latte Muffins

Sweet Potato Cranberry Muffins

Double Chocolate Black Bean Muffins

Superfood Muffins (With blueberries, walnuts, oats, quinoa, orange juice, and flaxseeds)

Fresh Tomato and Corn Muffins

Any Flavor Jam Muffins

Banana Split Muffins (With chocolate chips and cherries)
As much as it pains me to simply put this project to bed, unfinished, I’d much sooner release an ebook entitled “One Hundred of Hannah’s Worst Recipes!” There will surely be more ebooks to come… But almost certainly not one all about muffins. I think I’ll leave that one for people who actually wake up in time for breakfast to figure out.

Sorry that project didn’t pan out, Hannah! But I admire you for making the tough decision to stop – I have a bad habit of forging ahead in the face of all evidence telling me to stop!

Wow ! Some of these sound really delicious, Hannah. I really love muffins – easy to make and so portable ! Maybe it was the wrong time for the project, but if you change your mind in the future, I’ll definitely be interested in the eBook. Thanks for sharing your ideas anyway. Matcha latte muffins sound divine. What could go wrong in the muffin baking? were they too dense? Don’t give up, baking can be tricky-especially vegan baking. I’m sure you are already aware of that but never give up!!

It’s cool to see you admit that the muffin beat you – they still all look good though, and I especially like the sound of the superfood muffins – that’s the kind of thing I’d try to sell to my sceptical six-year old for breakfast!

You read my mind! Muffins are so verstile, grab and go, fun to create and delicious, one of my all time fav. breakfast/snack foods… all of these creations sound (and look) amazing! What do you mean by “Hannah’s worst” ? I CAN’T WAIT to buy THIS E-book!!! :D

Sorry the eBook didn’t work out. But on the bright side, I work at a local bookstore, and I sold your cookbook “My Sweet Vegan” tonight! I even told the girl to check out your blog! So even though there will be no muffin eBook (for now! I have faith!), you’re still passing on your wonderful recipes to the world! And the muffin porn is amazing, btw.

I love muffins too, but I have also been known to struggle with making any of them look as good as they are supposed to. As it turned out I was treating the dough the same way as I did with cupcakes, but for muffins the opposite is true. If you stir the dough too much the muffins will not come out right. They should be light and fluffy, too much stirring means hard and unedible, plus they don’t rise so good anymore. You probably know this already, but I just thought I mention in, just in case you didn’t!

Oh man, I was very excited when I read the beginning of your post…I guess it’s proof that none of us are perfect! I do love muffins so, but the texture and right amount of moisture can be really hard to achieve in vegan muffins. I’ve even so many really inedible ones, even from companies that make otherwise really tasty vegan baked goods. I have yet to produce the perfect vegan blueberry muffin, which is my favorite.

Ahh! Don’t you hate it when you feel you’ve lost your baking mojo? Or just your cooking mojo in general in my case. That happens to me every so often and it drives me crazy. I just want to sit on the floor in my kitchen a cry like a big baby. It’s usually only a temporary state though ;)

Don’t worry, it happens to the best of us. I’ve had many failed muffin-baking attempts (mostly because I try to sub out too many things at once). The pics are still amazing :) That sweet potato cranberry one sounds like heaven to me.

Ah well, the muffin porn is pretty to look at. I can’t ever make up my mind about muffins anyway. Most of the time they are either too dense and healthy or way too sweet and should have frosting and be called a cupcake. There never seems to be that perfect middle ground.
