About pitas: I used to have trouble with mine not puffing up too, and then I made two changes to my method (1) a REALLY hot oven, around 500 degrees-well preheated-in combination with a pizza stone; and (2) not rolling the pita circles too thin.
I have also found that once you roll the dough into circles, letting it rest for 10-15 minutes allows the pita dough to fluff up a bit, making it more likely to puff in your oven. Don’t give up! If you want the recipe I use, let me know, and I can email you it.
